I'd like to say that I'm a girl who already eats salads everyday. Some might assume that I do, as I'm vegetarian, but if you were to you'd be wrong. I like salads, I have nothing against them, but I find myself not eating them nearly enough. In the past I'd often go without eating a salad for weeks. I mean really, who wants to eat a salad when you can eat a carb?!
...and that is why I needed to do this.
The rules of the challenge are that you have to eat at least one salad a day for 100 consecutive days and document. I find "documenting" keeps me accountable, so I use this blog and my instagram account to do so. Friends who decided to join me are doing the same or even using Facebook. Whatever works for you. Salads can be anything from greens to pasta to egg to fruit. Whatever tickles your fancy, just as long as it's a salad.
Week 1 for me was all about the greens.
